Description

Tasting Notes: Les Cessieux is a study of Hervé’s use of finesse in what would traditionally have made a powerful and brooding wine

Selection of various vineyards

with smoky strawberry fruit balanced with fine tannins and refreshing acidity

Giusto feels these extended macerations help the wine obtain natural preservatives which in turn allows them do the aging and élévage with little or no added Sulphur until the bottling when there is only a small addition
